It really doesn't matter. With OTA delta updates, any exploit can be patched literally within hours of being identified. Go ahead and wait till 5.1 ships. 5.1.1 can be available to patch the hole as soon as Apple identifies the problem code.
The days of widely available jailbreaks are coming to an end, if they are not already over...

You are forgetting that the iOS3 jailbreak took nearly 3 months. The time it takes between the release of a new firmware and the time that firmware is jailbroken is in no way indicative of how secure the firmware is. These hackers have jobs, lives, uncontrollable events that effect how much time they can spend hacking. Unfortunately for us Apple took one of our best hackers this year, Comex, which most definitely attributed to the wait time we are experiencing right now.
I've been part of the Xbox hacking scene, Xbox360 hacking scene, PSP hacking scene and the iPhone hacking scene, and in every one of those scenes there were ALWAYS people who said "eventually they will get everything locked up real tight and the hacking days will be over." Well guess what, all of those scenes are still alive and kicking.
My memory of the OS3 'time 'til JB' is different - more like 2 months.
