Phone wont jailbreak after set to stock

i had my phone jailbroken using green poison 4.2.1

set the phone back to stock and everytime i try to jail break it again it says i have to plug into itunes and restore

If you set the phone back to stock then it would be on 4.3.5 which can't be jailbroken with greenpois0n. Do you have any SHSH blobs saved?

sounds to me like he thought that itunes will put what ever firmware is on the phone until you upgrade firmwares If I understood correctly?

i set it back to stock and i get 4.2.1

i clicked check for updates and it tells me thats the latest 1

Do you mean 4.2.10? 4.2.1 is not the latest firmware, it's either 4.2.10 or 4.3.5. If you have 4.2.10 your only option is to do a tethered jailbreak with Redsn0w.
