Advice with apple watch and iPhone 14 pro max

Good evening, I currently have a iPhone 14 pro max and would like to purchase an apple watch for around £300. I would like to use the watch to answer calls and reply to texts and also to be able to read them etc. I have a salon with Wi-Fi but I would also like to use the watch when out and about to do the same.

Which model would I need to choose?

I found this but I think it would only work with Wi-Fi, is that correct?

The Apple Watch you’ve linked to uses Bluetooth when your iPhone is near. If there’s no Bluetooth available, it will use Wi-Fi.
So if you intend to use your watch where there’s no Wi-Fi available, you’d have to take your iPhone with you, in order to get messages and read them.

There are Apple Watches that can do all of that without the iPhone close. They can connect to cellular. You’d have to pay about 50 £ more.

Thank you for the reply, easiest option by far.

would you say the £349.99 option is probably the best price and the price most likely to pay? £50 extra is okay i think. Plus i wouldn't need my phone with me at all times
