I have Iphone 5S
I am visually impaired and cannot read print messages.
How do I get Siri to read back my email for correction before sending?

I have not played around with them yet, but have you tried the functions under "Accessibility"?
Settings>General>Accessibility>Speech

"Speak Selection"
"Speak Screen"
"Speak Auto-text"
