Check first that the Torch icon is on in the Control Centre. To operate it, you will need to unlock the phone and swipe up to reveal the Control Centre. Then tap the Torch icon.

As to back tapping, you can set what action it causes, in Settings-Accessibility-Touch-Back Tap-Double Tap/Triple Tap.
