Ok cool, what about the crashing due to lack of ram? Is there stuff I can delete to improve this?

That, I'm not sure of, but ya I would uninstall anything that is really graphic or CPU heavy and see if that frees up some RAM, then you can try to pinpoint what is eating all your resources.

It doesn't seem to matter how much I delete or Don't delete it still does it, it's very confusing and frustrating

You could just have a very fragmented filesystem if you haven't done a fresh restore in a while. You should try doing a clean restore if you have your 5.0.1 blobs saved.
