I have a 4s and just jailbroke it. I am on 5.0.1 and forgot to turn off the auto-backup when connected to itunes. So I lost my pre-jailbreak backup. My question is how do I remove the Jailbreak now, and keep all of my contacts, etc... ? Also when 5.0.2 ( or whatever is next ) comes out will it automatically loose jailbreak when I update to It? Thanks in advance!

Yes, when you update you will lose jailbreak. To restore your contacts just restore from a backup that was made when your contacts were all there.

If I restore from that backup, which is jailbroken, will it not restore the jailbreak as well?

No, backup has nothing to do with system files.
+1... the backup file iTunes creates is a restore point from the state your iPhone is in @ that moment in time EXCEPT the Jailbreak w/ Cydia, packages, tweaks, ect.
