Im currently using 5.0.1, if i update my software to 5.1 , will all my apps, videos and mp3s will be deleted?

no you not lose anything,if you read the previous comment ignore it,the answer was inaccurate,updating does not delete anything......you might like to back up just to be on the safe side.

I think if you perform a software update through the phone itself, it will be smaller and nothing will be deleted.
But do i need to jailbreak it again right? I have already 113 apps on my iphone 4
You won't lose any apps, videos, mp3's
You however will need to Re-Jailbreak as just like any ios that has a jailbreak.
Also backup in itunes just incase something goes wrong.
Also get a program called pkgbackup as it will Backup Your Cydia apps, if you choose not to, you will need to reinstall all Cydia apps and tweaks you use.
