How can I use my iPhone to record playing the games on my phone. I have seen people on you tube that do it.

If the app supports Game Center’s Replay Kit, it will work this way:
Open the app, find the screen recording feature. It usually looks like a camera icon on the game’s main screen. Tap it and select "Record Screen". Then play the game, and stop recording when you’ve finished playing.
