Record long telephone conversations

I am using a Sharp MD MS 722 mini disc recorder to record long telephone conversations, up to four
hours long. I know there are apps for telephone recording but it is hard to get the data off of the phone
and into my computer

and the length is limited.
I have used a set up similar to the one below. I can play back the conversation from the mini disc recorder
and using the headphone out put as an output to my computer and have the audio on my computer.
The problem is when I record a phone conversation using the setup shown below the microphone from the headset is not
picked up. So the person on the other end of the line is recorded but my voice is not. How can
I record a telephone conversation from the iphone to the mini disc recorder?
