The instructions given by willerz2 in his post WILL restore your iPod to iOS 5.1.1. Try it out and see if it works, then tell us how it worked.

iOS 5.1.1 is the latest and last iOS for the iPod Touch 3rd generation........... If you restore using iTunes it will give you the latest iOS which is 5.1.1........
