Texting issue

Every once in awhile, I'll be composing a text and the voice activation will try and speak what I am typing. How do I stop this???

sounds to me like you activate siri by accident from the keyboard, If that is the case all I can suggest is try be more careful or maybe disable siri if you dont use it a lot. Or you could disable it while writing texts

It couldn't be Siri because Siri doesn't read out what you are typing, instead Siri type in what you are dictating.
