Two ways.... create your own Apple ID & iTunes account. Or, when Syncing via iTunes... go to the apps tab and uncheck the apps you don't want to Sync.

We do this with 5 iPhones and one itunes
Each Apple ID can log into iTunes via Store > log out (log in)
Apple ID is the most important part
Next most important is to tick Manually Manage Music

So if me and my gf use the same iTunes but have different apple id# we won't have a problem with contacts getting mixed up if we both sync to that iTunes? I want her to be able to use the music but nothing else when syncing

Do both of what Thomas and dbplumb said. Each phone would need their own AppleID. Then when you open up iTunes, make sure your preferences are not at automatically syncing and that you have manual control over everything. Then just drag and drop the music from your library over onto the iPhone in iTunes. Make sure you have manual control so that things don't get mixed up
