Removing music from the 5 w/ iOS7

Greetings,

I have a 5 with iOS7 and I backed it up through iTunes the other day and I discovered something - namely that every single thing I've ever downloaded from iTunes appears on the phone in the music section, along with a cloud icon to the right of them. Songs that I've placed on the phone in the music section are now gone.
Question: How can I remove all of those songs and does this have anything to do with the phone being backed up when the new iOS was installed.

Settings -> Music then scroll down and turn off "Show All Music". That should switch it to just the music on the phone. Confused the bejesus out of me when I first saw that.
