Sure you can, I have several replacements. Go to Settings > General > Keyboards > Text Replacement and set them up to your heart's desire.

You should already have one set up for you as an example:

Yes, it will take some time, but you will only need to do this once. Also, if you have a Mac you can enter these into your Mac, instead of iOS, and copy & paste will be much faster on that platform. Being that these shortcuts are part of iCloud, they will carry over into your iOS devices after a short wait.
