I'm trying to turn my display to black and white.

By searching, I've found that there should be a grayscale option in Settings -> General -> Accessibility, although my phone doesn't have a grayscale option there.

I have a 5s and iOS 11.2.6.

Thanks in advance for any tips.

Go to Settings>General>Accessibility>Display Accommodations>Color Filters and turn the switch on. The default is Grayscale but you can select from several filtered options.
BTW, don’t try a screenshot as it will be captured in colour no matter what the Grayscale or Colour Filtered options selected.
