How do you check each app data consumption over a certain period of time?

Hi,

I'm curious to see how much data each app I use consumes over time (month/week/daily) but I can't seem to find a clear number for this.

How can I check that?

That can be seen in Settings - Mobile Data - Use Mobile Data for. You can enable/disable which apps are allowed to use mobile data, and right below every app, you'll find how much it used since you reset it last time. It's not possible to tell how much they use daily/weekly/monthly, except it you reset the statistics regularly, and only one of these is possible.
