Erase All Content and Settings

Hi, iPhone 4 5.1.1 - have been having a hard time JB so read I could Back up devise in itunes (which I did) and Erase All Content & Settings from the phone.
I will then hopefully JB with Absinthe. Once JB, I assume I just restore from backup through itunes and all my content is back on the phone? Will this prompt me to upgrade to ios 6.1 or just keep my latest back up of content and 5.1.1? If not, I feel I am good to go and ready to give this a try.
Advise is appreciated.

i dont think you can erase all content and settings from the phone once the phone is jailbroken. but if you can, then you can easily restore the phone from a backup

Try not to re-post the same problem. Erase all content and settings in the Settings.app isn't the best option that Apple's made for the iOS devices. It works if you have next to nothing on your iPhone. If you're on a jailbroken iPhone, it gets a little tricky depending on what it deletes and whether or not it's successful
