Delete email address

When my wife goes to Gmail and taps c an old gmail address comes up how dose she delete it

You must refer to the Recents. If there is a blue "i" to the right of the email address, tap it. Then scroll down to delete from Recents. Many in Recents are email addresses of Contacts. I just ignore all that. They show in iMessage as well.
