Convert old iPhones to iPod

Now that my wife and I have our new phones, we want to turn our old phones into essentially iPods. But what will happen if we connect our old phones to iTunes? Will it reverse everything and make our old phones back to just that ~ our phones again.

Disable syncing for all tabs except for music when you sync your old phone.
