Where did everything go?

So my cable modem dies again and I can no longer connect through cellular on my iPhone 4s running iOS 5.1.1. Turns out I have to reset (on/off + home) and restart, something I've done many times before with no issues. All apps were closed in the status bar. All of a sudden all my Safari history is gone and a photo album is empty (still there, just empty).

First why won't my phone switch from wifi to cellular data without a reset, and second why did I lose information and data?

I am afraid to find out what else may be gone or missing. Does anyone have any experience with something similar?

Now iTunes doesn't see my phone. I've shut down and restarted iTunes and the computer, shutdown and restarted my phone, no joy.

Crazy thing, I can still access my shared music and videos.
