Using an unlocked, jailbroke 3G iPhone

i bought an unlocked, jailbroke iPhone for my wife. She may use it exclusively as an iPod since she doesn't have a data plan. My question is what all can you do with the phone without a data plan ( voice calls, text messages, picture messages)? She has a plan with T-Mobile for voice and unlimited text and picture messaging.

pretty much anything but use the 3g connection, though it has wifi so she should be ok to download apps and do anything with the phone, i myself barely use the 3g connection as isps offer so many wifi spots
