Right now I have iOS 9.0.2 on my 6s+ and am thinking of jailbreaking. What can I do so that when iOS 9.1 comes out my phone doesn't automatically update the iOS to 9.1 and ruin my jailbreak?

iOS updates are not automatically installed on your iPhone. While the update can download itself when the iPhone is on WiFi and plugged into a charger, it will never install itself without your express consent.

In fact, it's normal for jailbreaks to block OTA iOS updates.
