Time widget(?) while charging+horizontal

iPhone 15 / IOS 18.5
new(ish?) feature where when the phone is charging, and also horizontal . . .
it displays various (rotating) time displays.
world map / time only / time&date / etc.

is it possible to control this widget so it displays just one (user preferred) format?

You mean Standby mode. You have to set it up and save the settings.
