I bough iPhone 5 with iOS 6.0.3 and minor number updates are done automatically, so now I have 6.1.4.

I waited 2 months for the jailbreak to 6.0.3 to come out and now I have a version that cannot be jailbroken and this process will never end.

How can I jailbreak the phone this way?

There is, at present, no available jailbreak for iOS 6.1.4. The best advice is to wait on your current iOS. If a jailbreak for iOS 6.1.4 is released, you can jailbreak then. If a jailbreak for iOS 7 is released, you can upgrade and jailbreak.

BTW, iOS updates are never automatic. You always have to manually install an iOS update. The updates will download to your device automatically if it is on WiFi, turned off, and plugged into the charger, but the update will not install itself automatically.

That's true for major version numbers, not for minor numbers. I'm telling you they keep upgrading automatically the minor numbers.

It's never happened that way for me. I've always had to manually install every iOS update, major and minor. If your iPad is updating itself automatically for minor update versions, it's not behaving properly.
 
No iOS device will update automatically. It will download it automatically on full thresholds, but will not install them.

So I can avoid this behavior? or figure out what's wrong with my phone? Any clue?
 
Leave your phone on when it's charging and turn off wifi. (I never turn my phone off!) You shouldn't have to turn off wifi when charging, but it will be an extra safeguard to ensure this doesn't happen to you again. Also, make sure you have iTunes set to NOT sync automatically when connected. It is in preferences under the devices tab.

Ive heard of updates downloading automatically, but I've never heard of them actually installing by themselves.
