If you mean the colour of the emoji's, that can't be changed.

If your are carrying an iPhone iOS 8.3 or higher, you could long-press the emoji that you think is too yellow for you, and then select a decent color. Try it.

Anything newer than iOS 8.3 has not yet been released to the public.
