How to change backup folder location?

I have a new 64GB iphone 4S which is nearly full (I take a lot of videos). When I try to sync with Outlook thru iTunes and it attempts to do the automatic backup there is not enough diskspace on my (Windows XP) computer, so it fills up my disk and then quits. My PC only has 74GB of disk total, only 8GB available, so I obviously don't need to be adding backup files for a 64GB device there.

How can I either 1) change the location of the backup folder to my external hard drive (preferred) or 2) disable the automatic backup.

I do not want to use the iCloud for both privacy and internet access reasons.

This seems like a duh question, since backing up a 64GB device is going to use a lot of diskspace and there SHOULD be a way to do this, but I've looked everywhere I can think of online and not found an answer. Hard to believe this isn't a common problem with the 64GB iphone. Does anyone know of a way to do this?
