Can I save all of my SMS, Notes etc?

I wanted to extract and save onto my windows based PC all of my data on my iPhone 3GS.

I'd like to be able to save it to my computer and access it directly there WITHOUT use of the iPhone.

Can this be done? Can you suggest some software to do so?
