How does one transfer videos from the 4S to Finder on a MacBook Pro? I'd like to upload a few to YouTube and the phone fails every time I try (?)

You can retrieve them from your phone onto your computer and view them on Finder. You can use iTunes to retrieve them, Dropbox them, or use rooting utilities to do so
