In Itunes, Movies, right click the videos you want to alphabetize on the phone. Then click get info. When Media Mode shows Movies, select Home Video. The video will be moved to Home Videos in Itunes. Sync to phone. Then, when Movies is selected from phone, at bottom of screen there will be a Home Video section. Click it--shows an alphabetical list of your videos, with an album cover!
