I would like to use just the wifi on my iPhone while touring England. Would need this primarily for checking and sending email and iMessages.. I heard that to do so you need to turn on Airplane Mode, and then turn wifi back on. This should prevent any use of voice or data thru a cellular carrier. Is this correct? Thanks for any feedback.

Correct, airplane mode will prevent any use of cellular data as well as preventing someone from calling you and costing you plenty in roaming charges. I was recently on a trip out of the country and this is what I did.

And with that, if you download a VOIP app such as Viber, you can text and call home over wifi.
