transferring iphone content back to computer after computer crash

I recently had a my computer crash and I had to reinstall Windows and all my software including iTunes. It is all installed and iTunes sees my iphone. What I need help with is getting all my content from my iphone back into my iTunes library. All my music, photos, videos and apps are safe on my iphone and I now need to get them back into iTunes. How do I do this? The normal sync seems to only update from iTunes to the phone.
