I am getting an iPhone 5s and wish to give my wife my old iPhone 5. How do disconnect my old pone from my apple iTunes account? I am assuming when I register the 5s to my iTunes account, all my apps will come down. I don't care about any data on the phone BTW, but I presume I can back up from the 5 and restore to the 5s? Any thoughts appreciated!

To disconnect your iTunes from the phone:

Settings>iTunes & App Store>Click on your Apple ID and press sign out

Then:

Settings>General>Reset>Erase all content and settings

That will give her a new phone with nothing of yours on it.

As for the restore, each model of phone has a specific .ispw restore format, and detects the device itself- so I don't believe it would allow you to restore a 5 backup to a 5s... In fact, if you use the same computer as your wife, it may try to restore your old phone. (This is just from my history back when I has the 3G- long time, so it may be incorrect)

Your new iPhone 5S can indeed be restored from the backup of your iPhone 5. When setting up your iPhone 5S you will be given the choice of setting it up as a new iPhone or from a backup. You will have a choice from every backup stored in iTunes on your computer. Choose the latest iPhone 5 backup and you should end up with everything that was on your iPhone 5 now on your new iPhone 5S. The only caveat here is if your iPhone 5 has a larger storage capacity than your new iPhone 5S.
 
Thank you guys, it was in fact that easy! I backed up up the I5 to iCloud, then powered up the new phone, and restored. It worked perfectly, and the phone is now a clone of the iPhone 5. It also did an IOS update. I then erased all the old phone as you described (I would recommend doing this after you have successfully restored the new one, just in case), created a new iTunes account for my wife, and hey presto, all is fine! Thanks!
