Whenever I attach a cable from my iPhone 5 to my PC using the USB Port, it immediately starts synching. This is fine but after waiting over 3 hours, it is still synching. Is synching supposed to take all day long? Finally, I stopped the process. Is this normal? Also, what is the difference between synching and just updating?

Syncing transfers data from iTunes to phone. Not sure what update your are referring to? The iOS? Updates refresh the iOS and apps. Is that what you mean?
Or do you mean to ask about backing up? That process backs your phone data to either your computer or iCloud in case you need to restore your phone
