iPhone 8+ , series is on All the time ? Whenever i try to type in anything, like an eMail, and someone or myself talks, in the background, Series types over what has been typed in the box ? Why is Series on ALL the time without me Saying first "hay Series" ?

I assume you mean Siri? (Did you use voice entry to get Series instead of Siri?)
Settings/ Siri & Search/
Turn off Listen for Hey Siri and then a popup gives you the option if you want to disable Siri totally.
Alternatively, if you have tried the above, a soft reset is often the answer. (Volume up button momentarily, volume down button momentarily and then hold the power button until the Apple logo appears,)

Just realised that there is another possibility. Do you have a microphone on a blue circular background along the top and to the right of your home screen or apps?
If so, go to Settings/ Accessibility/Voice Control and turn Voice Control off.
If so, go to Settings/ Accessibility/Voice Control and turn Voice Control off.
