New Notebook & iPhone Restore at Same Time

I thought when I sync my iPhone to iTunes it's done. That I could get a new iPhone and re-sync with iTunes and have all my stuff on my new phone. In like manner I thought when I use a new notebook and download iTunes my iPhone data goes with that? Am I incorrect?

I got a new notebook and installed iTunes. Then my iPhone would not correctly sync to the new notebook. The Apple store reformatted my iPhone. Where is my old data, such as my Notes?
