Hello,

Is their anything I need to restore after jailbreak or am I done? Just set up Cydia and I'm ready?

After you're jailbroken, you're done. You'd only need to restore if you wiped your device before jailbreaking. Otherwise, Cydia's all you need to fiddle with. Make sure you install MobileSubstrate or SBSettings to allow you to enter Safe Mode in the occasion that something goes wrong.

I keep on reading to change password Alpine. does SSH get installed or turned on after using evasi0n which I gather is the reason I would want to change password?

No, SSH is a Jailbreak tweak/package that you can install via Cydia that gives you remote access capabilities to your iDevice. Only then do you need to change the stock "Alpine" password. Leaving it stock makes your iDevice susceptible to malware & such. But ONLY if you choose to install SSH... which the majority of JB users have no need for.

When I hear about viruses affecting jailbroken phones is that because they have SSH installed and enabled? Are my banking apps and safari still safe and secure? Thanks

Rarely will anyone take the measure to hack your device at all. Malware, Spyware and bugs, those are much easier to do with the physical device in their hands because of all the different levels of sandboxes on the device. The risk of getting hacked and such is next to zero TBH
