When I set up my iPhone, I added my gmail email account, and as a result, I now have thousands of emails on my iPhone. I want to delete all of these emails and prevent the iPhone from downloading further emails. Is deleting the Mail app the easiest way to achieve this?

If you don't want to view any more emails from your G mail account, the best way is to delete the G mail account. The mail app itself is a stock app and can't be deleted.

How do I delete the Gmail account?

Go to Settings - Mails, Contacts, Calendars. Tap the Gmail account, then select "Delete Account".

Just to add here that by deleting the account you also stop syncing contacts, calendars, and notes with your gmail account if you had them enabled before.
