Blue text bubble beside name when composing a text?

When I compose a new text, I type in the name and beside the name appears a blue bubble. My question is that sometimes it is not there. Does this mean they are texting at that moment? And what does the (.....) mean after you spend a text to someone? Does it mean they are reading it, or replying to your text?
 
The blue bubble in my experience is someone I have done FaceTime with or that also has iMessage. It seems to remember. The bubble with the dots means they are typing.

The blue bubble denotes a contact that is capable of sending and receiving iMessages. Not sure why it doesn't always show up during composition though. The (...) means they're replying, via iMessage.
 
You can control this blud ibuble form your text. You go the setting of text and get the option here. Just close the option. Dont notice again.
