What do you mean? On iPhone? Or in your iTunes? Or???
If you are talking about doing it all from your iPhone, it will be possible only with a tweak called PhotoAlbums+
But you can also do it from your computer iTunes.

When I take a photo, I want to store it in a folder. Now all my pictures are organized after date.
