Why would you want to do this anyways? Is the device jailbroken or vanilla? What kind of info do you want?

Why don't you do it with iTunes? As far as I have heard, the utility is good both for creating a backup and restoring from it as well.

iTunes keep your most recent 5 backup files. The next time you will make a new backup, iTunes will delete the most older one so that you still have 5 most recent backup files in there.
