Where can I find the defaults?

I'm getting into theming and would like to know of the options available to me. Where can I find the default iOS theme(s) on the iPhone 4S? I'd like to study them to further my knowledge of iOS themes.

There is no default "theme." The default iOS springboard uses icons and plist files from all different areas of the filesystem, they are not all contained in a single folder like Winterboard themes would be.

Ah hah, that's why I haven't been able to find everything in one place. Thank you. Looks like I have some hunting to do.
