Since downloading 7 I have not been able to turn the iPhone 5 on its side to get a full screen image when watching video feeds
That is actually an application issue not and iOS 7 issue. Which application are you having the issue with?
You may want to hard reboot your phone. You can do this by holding down the power button and the home button at the same time till the Apple logo appears. Because I just took this screen shot from my iPhone 5S using the iPF app. <img src="http://www.iphoneforums.net/forum/attachment.php?attachmentid=13645"/> And that is landscape mode.
Ok. Fixed! Went to ASK.com and got the answer. On the new control panel the right hand side icon is a screen rotation lock! Just clicked on it to open it and Voila!!!! It's all back to normal!I did the reboot (again) and still no automatic landscape mode like before IOS 7 on my iPhone 5.

Apparently it's now too easy to access.Very nice and well done! Didn't even think about the portrait lock mode. Rarely use that feature and before iOS 7 it was actually not very easy to access.
