New iPhone user, coming from Android

Hello everyone! Just thought I'd say hello. I'm coming from Android and wanted something much more stable, I was tired of having to constantly update my phone to make it work...so I hear the iPhone is very stable?

So what does jailbreaking do to an iPhone? Make it a lot more customizable? Sorry for the noob question, but coming from Android, I guess jailbreaking is like rooting?
