what are you trying to pair it with?

Turn Bluetooth on in Settings.app > Bluetooth, turn the pairing device on and it's discovery mode on. Wait for the iPhone to pick up the model/signature of the Bluetooth enabled device, enter a PIN if/when required.

You can pair your music in the car as well but you have to hit MUSIC and hit the play button and it'll play everything in order thru your car stereo.
