I’ve forgotten my Apple ID password, I’ve changed sims and phone number, bit don’t know how to create a new Apple ID without any of these details

I have tried everything that has been suggested, but can’t seem to change my Apple ID or password. Feel like giving up. I’ve forgotten my password and change my phone number. But can’t seem to do anything with this phone

Account recovery is the last option to get access to your Apple ID, afaik.
If you‘ve already tried it (Recover Your Apple ID - Apple), there‘s no way we can help.

Is there an Apple Store near you? Maybe they know another possibility to reset your password.
