Curious about something with an iPhone 11

I'm curious as to why an iPhone 11 would have 3 IMEI numbers and 2 MEID numbers?

Afaik, it should show 2 IMEI numbers (one for the SIM card, one for eSIM) and one MEID.

Yep, I know and still have the box and those numbers are all there but for whatever reason if you look the phone up it will show a third number as the phone as well.
