If you are on an iPhone 4S and iOS 5.1 at present you can't. If you are on iOS 5.0.1 then search the forum for jailbreak.

You cannot jailbreak an iPhone 4S on iOS 5.1 at this time. Cannot.

You CANNOT jailbreak your iPhone 4S if you are running IOS 5.1.
