There is one thing I’m not clear on regarding iOS backups across these three methods:
iTunes
Finder
iCloud.


Does an iPhone backup consist of a block-by-block copy of iOS? In other words, is an 'image' of iOS generated?
If that were the case, I imagine the entire operating system would be copied along with the current configuration.
If I remember correctly, option 3 (iCloud) does not back up the OS.
What way can I use to install fresh and cleaned installation of iOS ?

None of those backups include the operating system. If you want to install the latest iOS, you can restore the iPhone to factory settings and it will automatically install the latest version.

thanks, so best solution is to make factory reset and I can restore all apps and its data by restoring from iCloud backup ?
 
Keep in mind that emails require special treatment to get them backed up. Do a DuckDuck or Google search from more info.
 
The most complete backup is an encrypted local backup. This one requires the use of a local computer and is passworded.

Restoring from such a backup will preserve passwords and health data.
 
An encrypted local backup will not save and restore emails. It assumes you have emails on a server so you can get them from your server.

Same thing happens when you get a new iPhone and use Quick Start to copy over from you old iPhone.

Are you referencing to pop3 mails which are downloaded and stored into iPhone memory ?
As you said, if you are using email on Servers (Imap protocol) I think you can restore all mails.
But restore task from iCloud can retrieve configuration of all email account?
E.g. I have 4 email accounts with different configurations, where I synchronize notes, contacts too.

I know keychain is restored by iCloud backup infact It's possible to select It as backup item.

Is there a difference in how an iOS restore behaves regarding applications when using iCloud versus a Mac backup? Specifically, once iOS has been restored to factory settings:

  1. I assume that an iCloud backup only contains the data for the apps, so during the restore process, the apps are re-downloaded from the App Store and then the data is re-imported from the Cloud. It's right ?
  2. In the case of a Mac backup, is the same process followed? That is, are the apps installed from scratch by downloading them from the App Store?"

iCloud backups include all of the information and settings stored on your device that aren’t already synced to iCloud. iCloud backups don't include:

  • Data already stored and synced in iCloud, such as Contacts, Calendars and Notes
  • Photos, if you turned on iCloud Photos
  • iMessages, text (SMS) and multimedia (MMS) messages, if you sync messages with iCloud
  • Data stored in other cloud services, such as Gmail and Exchange mail
  • Apple Mail data
  • Apple Pay information and settings
  • Face ID or Touch ID settings
  • iCloud Music Library and App Store content
  • Offline maps
A computer backup of your device, which is not the same as a sync, includes almost all of your device's data and settings. A backup from a computer doesn’t include:

  • Content from the iTunes and App Stores, or PDFs downloaded directly to Apple Books
  • Content synced from your Mac or PC, such as imported MP3s or CDs, videos, books and photos
  • Data already synced and stored in iCloud, such as iCloud Photos, iMessages, and text (SMS) and multimedia (MMS) messages
  • Face ID or Touch ID settings
  • Apple Pay information and settings
  • Apple Mail data
  • Activity, Health and Keychain data (to back up this content, you'll need to create an encrypted backup)
  • Offline maps

In iOS I can see 'saved to iCloud': Photos, Drive, Notes, Password, messages, ...
Apple Notes are included.

I don't understand in both cases if the apps are re-downloaded again from the App Store, b
before to import data from backup(iCloud or local)

When you restore an iPhone from a backup you will see the App appear first, but it will be shaded until the data is downloaded.
