What iOS goes on if i restore my phone?

To unlock my phone AT&T wants me to backup (done) and restore my phone. If I do this will I maintain my current iOS (5.1.1) or will it restore to the newest version of iOS7? I am in a dilemma as I wish to keep my current iOS on this phone (4S) and will go to iOS7 when I get my new 5S/6.

If you do a restore on your phone it will end up on the latest iOS version, iOS 7.0.4 in this case. It looks like you have a choice to make. Stay on iOS 5.1.1 and not get your phone unlocked or restore and end up with an unlocked phone on iOS 7.0.4.

I must do a lot of research, but will not be unlocking my phone today :(

BTW, if you plan on selling your iPhone 4S when you get your new iPhone, having it unlocked will boost it's resale value. If that iOS is jailbreakable it adds more value still. With that being said, iOS 7.1 is due to be released sometime in the next few weeks, so you may want to do the restore before that time as the evasi0n 7 jailbreak has been plugged in the iOS 7.1 beta 4 version and there's no reason to expect any different from the release version.

I'd planned on using it as a media device and GPS in the auto which is why I wanted to keep it on iOS 5
 
I think it will go to ios 7 but I think it will ask u do u want to update.

do not upgrade to ios7, it is not so good for your 4s
 
Just back up your phone to the cloud first and restore from backup. It will not update your ios that way.

If your new phone already has ios 7 then your out of luck.

Restoring an iPhone automatically installs the latest compatible version of iOS. Restoring from backup will not keep an old iOS version on the phone.
 
Um yes it will. I have done it on about 25 iPads for work. The backup even specifies which ios

I didn't think so either. When I get to work I can post some screen shots I took as I was doing it.

If Apple is no longer signing the iOS version that was on the device when the backup was made, you cannot restore to that iOS version. The last part of the restore process is the verification with Apple servers.
 
Don't recall the actual time frame they may have still been signing it then, but we were not permitted to upgrade to ios7 at work until they tested it thoroughly and that usually takes a few months.
 
I think we are mixing up terms, here.

Restoring from backup will not change the iOS loaded on the phone. All it will do is put the last backup iTunes has onto the phone. This can be done at any time by connecting the phone to iTunes, right clicking on it and selecting "Restore from Backup."

The only thing you cannot do, IIRC, is put a backup from a newer iOS onto a device running an older iOS. For example, putting an iOS 7 backup onto a device running iOS 6; backups are not downward compatible.

However, if you "Restore" the phone, yes, you have to restore to the current iOS. In this case, when you are restoring the iOS, there is an option to "restore from backup" (which is an option offered by iTunes along with "restore as new").

The "restore from backup" process, while tied with the "restore iOS," is separate and can be done at any time without affecting the device iOS.

Yep That makes perfect sense now. and Yes I had some ipads that had the newer ios backups so the older backups for these were "unavailable to these devices" (all 50 ipads can be backed up from anyone elses backup on the account if compatible)
